Grandma Carol's Holiday Torte

What the heck is Torte?

It's a delicious nutty, meringuey, cold Holiday type "pie" that my Grandma has made since we were little. I LOOOVEEE it. The ingredients sound so weird when you are mixing them up, but all together it is the best flavor ever.

You need to at this to your Holiday treats repertoire!

There will be two different steps. One to make the crust of the torte, and one to make the whipped topping of the torte.

Ingredients for Crust

16 Ritz Crackers (crushed)
1/2 cup Chopped Pecans
3 Egg Whites
1/2 tsp Baking Powder
1 tsp Almond Extract
Pie pan

Instructions for Crust

I use my handy dandy kitchen aid mixer for the crust as well as the whipped topping in order to give it all the correct texture and volume!

1. Preheat oven to 325.
2. Beat egg whites and then add the sugar slowly. Let mix.
3. Add almond extract and baking powder. Mix thoroughly.
4. Use a food processor to chop the pecans and ritz crackers together. By hand, fold both into the mixture.
5. Butter pie pan and pour mix into it.
6. Bake for 30 minutes and allow to cool while making whipped topping.

Ingredients for Whipped Topping

1 pint Heavy Whipping Cream
1/2 cup Sugar
1 tsp Vanilla Extract

Instructions for Whipped Topping

1. Pour whipping cream in mixer and beat until it forms stiff peaks.
2. Pour in 1 tsp vanilla and 1/2 cup of sugar. Add more sugar until the topping is sweet enough to your own tasting.
3. When torte crust is cooled spread the whipped topping onto it evenly and place in freezer to freeze. 4. Pull out of freezer after if has frozen through and serve!
