Arya's Frey Pie

After last week's episode of Game of Thrones who was so excited when Gendry proposed? But of course a strong, independent character like Arya was never going to accept--she was always going to go off on her own adventures instead of being someone's lady. She's never fit into the part of a lady and has always been a bad a**. So with that, I had to share with you the Arya Frey Pie recipe that we made, as a nod to her continuing her quest with the Hound to kill of the rest of the people on her list.

The moment Arya served the pie to Lord Frey was such an awesome moment, solidifying that she knows how to stick it to the people that most deserve it. Hopefully we will see an Arya-Cersei moment here within the last two episodes!

This recipe is HEAVY, but so delicious! Even Jax liked it and ate it all. It was a good way to hide all the veggies he hates to eat. It takes a bit of time to make but it is absolutely perfect for a GOT party. And it is good even when reheated!

Arya's Frey Pie

Ingredients

8in extra tall springform pan
Butter for greasing
2 packages of sheet pie crust (or you can choose to make your own)

2 lbs ground turkey
8 oz thick cut bacon (chopped to 1in pieces)
1 jar of prepared turkey gravy (or you can make your own)

2 large carrots (diced)
2 large parsnips (diced)
1 med onion (diced)
8 oz mushrooms (diced)
1 small turnip (diced)
1 cup water
1/2 tsp crushed rosemary
1/2 tsp dried oregano
Salt
Pepper

1 egg
1 egg white
1 tbsp milk

Instructions

1. Grease your springform pan lightly with butter. Take out your sheet of pie crust and cut a square that bigger than your springform pan (you'll need a big square so that you can use the edges of the square for the sides of the pan). Place it inside the pan and manipulate the dough to be evenly distributed across the whole bottom of the pan as well as the inside edges. it is ok (and almost better) if the dough goes over the top edge of the pan at this point in time. If you want you can do just the bottom, and then follow with the edges if that is easier for you. Just make sure to fuse/seal the edge piece to the bottom piece. Place in fridge as you prepare all the filling ingredients.

Filling
2. In extra large skillet cook bacon over medium heat. Do not cook to a crisp, just cook until it is cooked all the way through. Transfer bacon to a plate and save the bacon grease.
3. Add your ground turkey to the bacon grease skillet. Sprinkle with pepper and salt. Cook on medium heat until browned. Remove pork and place on a plate.
4. Add onions to the skillet and cook on medium for about 5 minutes, just as the onions are starting to turn translucent. Add in the rest of the diced vegetables, cook for a minute. Add the ground turkey back into the vegetable mix and stir.
5. Add 1cup water and put lid on. Allow to simmer for about 10 minutes. Uncover, and continuously stir until the vegetables are tender and all of the water has evaporated.
6. Stir in the gravy to the meat and vegetable mix. Add your oregano, rosemary, and more salt and pepper to taste.
7. Preheat oven to 400 and move top rack down enough to fit your springform pan. Cool meat mixture for 30 minutes, stirring occasionally.

Assembly
8. In small bowl, whisk the egg white until it is frothy and brush over the bottom of your chilled pie crust. Pour the meat mixture on top and create a small mound in the middle of the pie.
9. Cover the top of your pie with another pie sheet and then cut to a circle slightly bigger than the springform pan. Roll the dough inside and under and make sure you crimp the edges to the bottom dough piece to seal the pie. Or you can attach the bottom piece to the top by making a nice edge piece of the pie and pinching together. But make sure all of the crust is on the inside edge of the springform pan, otherwise it will break when you release the pan.
10. Whisk egg and milk together in bowl and brush over the top of the pie. Cut a few slashes in the top of the pie for steam to be released. This is when I also cut a dire wolf Stark sigil into another pie sheet and placed it on top of the pie as a little extra flare.
11. Place pie on top of a baking sheet (to catch any overflow) and place in the oven. Bake for 55-65 minutes, until the crust is cooked through and slightly golden brown. Check on the pie around 45 minutes (you can cover loosely with foil if it is browning too quickly).
12. Take out pie and allow to cool in the springform pan for at least 15 minutes before releasing the pan and cutting it.
